  1. 1 kg lean pork (cleaned)

  2. 10 cloves Garlic
  3. 1 inch piece Ginger
  4. 10 dried red Chilies
  5. 10 Peppercorns
  6. 8 Cloves
  7. 1 inch piece Cinnamon
  8. 1 tsp Cumin seeds
  9. ½ Mustard seeds
  10. 2 medium Onions, chopped fine
  11. ½ tsp Sugar
  12. 1½ tsp Vinegar
  13. 2 tbsp Oil
  14. 2 cups Water
  15. Salt to taste
  • Cut the pork into ½ inch sized pieces. Apply salt and keep aside.

  • Grind all the spices and blend it with vinegar, adding the ½ tsp sugar.

  • Coat the ground spices to the meat and marinate for 2 hours.

  • Heat oil in the pan on medium heat and add the meat.

  • Fry for few minutes, then add the chopped onions, the remaining vinegar and the water.

  • Stir and cook till meat is tender and the oil rises to the top.
