Brinjal – 6 (small)
- Baby Potatoes - 6
- Onion - 1(finely chopped)
- Garlic - 4to 6 cloves (chopped)
- Ginger - ½ inch piece (chopped)
- Chilli powder - 1 teaspoon
- Turmeric powder - ¼ teaspoon
- Cumin powder -1 teaspoon
- Tomato chilli sauce - ½ dessertspoon
- Oil - ¼ cup

Wash and cut brinjal. Slit each on all four ends.

Boil the potatoes in a pressure cooker until the 2nd whistle.

Heat oil in a pan; add the brinjal along with salt and turmeric powder. Fry until it become reddish. Keep aside.

Heat oil; add onions and fry until light brown.

Add ginger and garlic. Fry well. Add chilli powder, cumin powder and stir for a minute.

Add the boiled potatoes (cut them in halves) and brinjal.

Mix well. Pour tomato sauce over it. Garnish with chopped coriander leaves.

Best served with roti.
