Brinjal - 250g
- Onion - 2
- Green chilli - 2 (chopped)
- Garlic paste - ½ teaspoon
- Turmeric powder - ¼ teaspoon
- Chilli powder - 2 teaspoon
- Cumin powder - ¼ teaspoon
- Fenugreek powder - ¼ teaspoon
- Mustard - ¼ teaspoon
- Oil - 4 to 6 dessert spoon
- Vinegar – 1 teaspoon
- Water as required

Wash and cut brinjal and onion into small cubes.

Heat oil in a pan; add brinjal along with salt and turmeric powder.

Fry until it becomes darkish. Keep aside.

Heat oil in the same pan, crackle mustard, and then add onion, green chilli and garlic paste. Half fry them.

Add chilli, cumin & fenugreek powder. Stir well for minute.

Add tomato and sauté until it becomes soft.
-
Add the fried brinjal, vinegar and required water. Boil well and turn off flame.

Best served with rice.
